Take two sheets of matzo...

Run the matzo under the faucet until wet but not soggy. Transfer the matzo to a plate.

Add the eggs, milk, and vanilla in a small bowl.

Whisk until well combined.

Melt the butter in a non-stick pan.

Break up the matzo and add to the pan.

Sauté a few minutes coating the matzo with the butter.

Add the egg mixture to the pan.

Make sure to coat the matzo.

Gently fold the together until the eggs are set...

But still slightly wet looking.

Serve with syrup and berries.
