Mediterranean Chicken Salad
Put a little EVOO into a baking dish.

Add Chicken Breasts to the pan.

Sprinkle with S & P and Greek Seasoning.

Drizzle with Balsamic Vinegar.

Bake in a 350 degree oven for about 30 minutes or until it is 165 degrees.

Let’s make the salad! Chop arugula for the base!

Chop Artichoke hearts.

Arrange the ingredients over the arugula in sections. Add Kalamata olives.

Add chopped roasted red peppers.

Add chopped cucumbers.

Chop your tomatoes.

Add them to the salad 😍

Chop a red onion and add it too.

Pour in some crumbled feta.

Let’s make a dressing of EVOO, balsamic vinegar, S & P and Greek Seasoning.

Once your chicken is cooked chop it up.
