Mediterranean veggie bake
Dice the bacon and onion, chop everything else into cubes. Grate the cheese.

Add your olive oil to a medium pan over medium heat. Preheat your oven to 180 degrees Celsius.

Add the bacon.

And the onion.

Coat in the olive oil and cook until the onion is soft and the bacon starts to colour.

Add in the tomato purée.

And the capsicum.

Then the basil (tear it as you go!).

Add the zucchini.

Add the eggplant.

Stir to coat it all.

Pour into a baking dish.

Top with cheese.

Sprinkle with bread crumbs.

Into the oven for 25-30 minutes at 180 degrees Celsius.

Remove when golden and bubbling.
