Melomakarona - Greek Honey Cookies with Walnuts
Add flour to medium size bowl

Along with the semolina

Along with the baking powder

Then whisk well to combine

In a large bowl whisk together the olive oil and the sugar for a few minutes until the sugar starts to dissolve

Then whisk in the orange zest

Mix the baking soda into the orange juice then whisk this mixture into the oil mixture too - along with the brandy

Add flour a little at a time - whisk while it is still runny and a thin batter

Once it starts to thicken switch to a spatula & very gently fold in the remaining flour mixture DO NOT OVERMIX (allow to rest 10 min)

Then scoop out portions and roll into a ball then shape into an oval-like egg shape

Pierce each a couple of times with a fork then bake

Until golden craggily and set - allow to cool completely (more details in post about this)

In the meantime make dipping syrup - add water, sugar & aromatics to small/medium pot

Simmer 8-10 min stirring a few times to make sure all the sugar is dissolved

Take off heat, remove aromatics and stir in the honey

Place cookies into the hot syrup a few at a time

Approx 30 seconds each side - more or less according to how syrupy you want them to be

Then remove onto tray or parchment lined baking sheet

I drizzle on an extra bit of honey on them (optional),then sprinkle over a generous amount of ground walnuts

Allow them too cool and then enjoy

They are irresistible and i bet you won’t be able to stop at one
