Mexican Christmas Apple Salad
Ingredients: apples, pineapple, dried cranberries, sour cream, pineapple juice and chopped pecans..
Chop your apples. I like to leave the skin but you can peel it off if you want.
Chop 4 slices of pinneaple (about 2 cups).
Transfer the apple and pineapple chunks to a salad container. Add cranberries and pecans.
For a quick pineapple juice, I simply pressed a piece of fruit on a colander until I got all the juice.
Mix the sour cream with a bit of pineapple juice.
Add more juice and keep mixing until you get a runny consistency. (I used a 1/3 cup of juice for 1 cup of sour cream)
Pour the cream over the salad and mix.
And that's it! Serve as a side dish, a simple dessert or just as a mid day snack. Enjoy!
