Mexican Wedding Cookies
Gather ingredients: 2 cups flour, 1 cup butter, 1 cup pecans, 1/4 cup powdered sugar, 1/2 tsp cinnamon & 2 tsp vanilla.

Finely chop 1 cup pecans using the food chopper.

Add 1 cup of shopped pecans, 1/4 tsp cinnamon, 1/4 tsp salt & 2 tsp vanilla to the 2 cups of flour; blend well.

Add 1 cup softened butter and 1/4 cup powdered sugar to large batter bowl. Use hand mixer on medium speed to blend until creamy.

Add flour and pecan mixture in batches to creamy butter in batter bowl. Blend & continue until all is blended together. Do not over mix.

Using a small scoop, firmly level each scoop against the side of the bowl. Place on stoneware 1” apart.

Bake at 350F for 10-12 minutes.

Let cool for 5 minutes. Carefully roll each cookie in powdered sugar while still warm.
