Microwave Raspberry Curd
Blend fresh raspberries into a smooth purée

Strain purée to remove seeds

Combine egg yolks, sugar, raspberry purée and butter in a heatproof measuring cup

Microwave on High for 1 minute

Stir well, then microwave again for 1 minute

Repeat until thick and smooth, about 3-5 minutes total

Curd is done when it coats the back of a spoon

Pour into jars and cool completely
