Microwave Sabudana Khichdi
Add 1 cup Sabudana in a colander & wash under running water for 1 minute to remove starch. Soak with water about 1 inch above the level of sabudana

Soak for a minimum of 4 hours or overnight. All the water would have soaked up &

Take 1 or 2 pearls of sabudana & press it in between your fingers. If it gets mashed, it means that the sabudana is well soaked

Into a large microwave safe bowl, add 2-3 tablespoons of oil

Add 1 teaspoon cumin seeds, 4-5 Green chilies chopped

Mix & Microwavei for 1 minute for the cumin seeds to Splutter

Take the bowl out & add Sabudana, roasted & coarsely powdered peanuts

Add 1 medium sized boiled & roughy mashed potato

4-5 Curry Leaves

Salt & mix well

Close with a microwave safe lid & Microwave for 2 minutes

This is how it will look after 2 minutes. Add 2 tablespoons of Grated Coconut

Close the lid & microwave again for 30 seconds

This looks done. Mix well again

Sabudana looks really well cooked

All the grains are separate & well cooked

You can garnish with some chopped coriander before serving
