To a saucepan add sugar...

Stir thoroughly to combine all the ingredients.

Place the saucepan over medium low heat and insert a candy thermometer.

Continue stirring until the mixture begins to boil. It should thin out a bit just prior to boiling.
Continue to stir as the mixture boils. It should be nice and foamy!

Continue boiling until the mixture reaches temperature.
Off heat and add vanilla.

Working quickly, add pecans.

Immediately stir the pecans to coat them in the candy mixture.

Make sure they are coated completely in all that goodness! This will take a bit of elbow grease!
Once the candy mixture begins to harden, pour out the pecans onto a piece of parchment paper.

Let them harden and cool completely before storing, but be sure to sneak a few while they’re still warm!
