Mini Apple Pie 🥧
Sift 2 cups of flour and 1 tsp of salt into bowl

Add 2 cups of butter cut into cubes

Mix until curds are the size on peas

Add together 1 egg, 1 tbsp of white vinegar and 4 tbsp of cold water

Beat together

Add egg mix to flour mix and stir with fork until moistened

Knead dough into a ball with hands

Cover dough and refrigerate for 30 minutes or more

Peal 3-4 Apples (I used Honey Crisp)

Cut apples into desired size and toss in water while completing the next step

Combine 3cups water, 1/3cup cornstarch, 1&1/3cup sugar, 1/4tsp salt, 1/4tsp nutmeg and 1tsp cinnamon

Stir then Boil mixture over Med heat stirring often. Once bubbling  add 3-4 cups of chopped apple

Simmer over low to med heat for 5-8 min or until syrup like consistency. Stir often.

Store pie filling in tubs or jars until at room temp, or refrigerate/freeze for later use

Prep your work station!

Cut dough in half, use one half for pie bottoms and other for tops

Roll our dough until it sits at about 1/3 of a cm thick

Use large circle cut out to cut 6 pie bottoms (they come with the mini pie tray)

Place large circles in mini pie tray

Fill pies with rough 1/3cup of pie filling

Use small circle cut out to cut 6 pie tops

Use paring knife to design you pie tops, use to cover then crimp/flute edges

Bake at 400° for 25 minutes or until golden brown on edges

Leave pies in pan on drying rack for 5 minutes then remove to cool
