Mini Chocolate Cream Pies
Combine the sugar, cocoa powder, cornstarch, and salt in a large saucepan OFF of the stove.

Whisk in milk & heavy cream. Place saucepan over medium heat. Whisk in egg yolks. Cook 8-10 min.

When thickened, remove pan from heat. Stir in vanilla extract, butter & grated chocolate.

Whisk until melted and well blended.

Spoon filling into mini pie shells. Cover with plastic wrap touching the filling. Chill 4 hours.

Add sugar and heavy cream to an ice cold mixing bowl. Beat until stiff peaks form.

Using a spoon or piping bag and tip, add a dollop of whipped cream to each mini pie.

Top with extra grated chocolate, if desired.
