Mini Crustless Onion Bacon Quiche
1/2 small Onion should be very finely minced

Add to pan to sauté: 1 tsp avocado oil, 1/2 small onion and 5 Tbsp of Real Bacon Bits

Sauté until onion is translucent

Meanwhile add 2 egg whites, 2 large eggs, 1 cup milk, 1/2 cup half & half and 1 Tbsp flour. Salt and Pepper to your taste to a blender.

Blend at medium speed

For about 20 seconds

Your egg mixture should be frothy

Distribute bacon onion mixture in each cup

Pour egg mixture over bacon and fill each cup

Make sure they are evenly filled

Add 1 tsp of cheese to the top of each cup

Bake at 350 degrees about 20 minutes or until eggs are set

Eggs will fall slightly when removed from oven. Add another tsp of cheese to the top to melt

Remove from cups and serve as desired
