Mini Vanilla Cupcakes with Vanilla Buttercream Frosting
Prepare your ingredients. The butter should be at room temperature. Preheat oven to 350F. Line a mini cupcake pan with mini paper liners.
Mix flour, baking powder, & salt. Set aside. Beat butter & sugar until fluffy. Add eggs & vanilla. Alternate adding flour mixture & heavy cream.
Fill each cupcake well about 1/2 to 2/3rds full.
Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean. Remove from the pan and allow to cool.
Prepare the frosting while the cupcakes cool. Again, the butter should be at room temperature.
Mix the ingredients for the frosting in an electric mixer fitting with a whisk attachment on low speed for 1 min. Increase to medium until smooth.
Pipe or spread the frosting onto the cooled cupcakes.
