Add cheese, salt, and pepper. Stir to combine.

Crack an egg into the mixture along with flour. Stir until no dry spots remain.

Add oil to an already hot skillet. Scoop 1/3 cup corn fritter batter into the pan and flatten it.

Cook 3-4 minutes per side until golden brown.

Eat plain or top with mashed avocado and serve!
