20 Minute Mexican Rice

1 tbsp avocado oil
1/2 cup white rice
1 cup chicken broth
1/2 cup tomato sauce
1 tbsp avocado oil
1/2 cup white rice
1 cup chicken broth
1/2 cup tomato sauce
1/4 tsp garlic powder
salt and pepper
Heat a small amount of oil in a pan and add the rice

Stir to toast the rice for a few minutes

Add the chicken broth

Add the tomato sauce

Add the garlic powder and cover. Cook on low for 15-20 minutes

When the liquid has been absorbed and the rice is tender remove from heat

Serve with fresh ground pepper, cotija cheese and hot sauce!
