Bring your cuts to room temp

Generously rub with salt, pepper, and spices

Don’t forget to rub both sides

Heat a pan with a glug of olive oil

Once the pan is ripping hot, introduce the steak

Add butter, garlic, and two sprigs of rosemary

Sear both sides

Baste with the pan butter as the steak cooks

Take the pan off heat and finish your baste

Let the meat rest

Chop and serve
