Moist Vanilla Cake Recipe
What you'll need
Gather and measure your ingredients. Butter and eggs should be at room temperature.
Start by creaming butter and sugar until pale and fluffy... about 8 minutes
Add the eggs and vanilla extract and beat to combine (not to worry if it curdles 😊
Gently fold in the sifted dry ingredients on lowest speed, or by hand using a rubber spatula or wooden spoon
Finally, fold in the buttermilk to give you a smooth fluffy batter.
Divide the batter equally between three 7 inch/16cm greased baking tins, and smooth them down using an offset spatula or knife
Bake at 170C/325F/Gas 3 for 30 minutes or until they spring back when gently pressed down.
Layer and cover with my delicious Vanilla Buttercream and enjoy 😊
