Prepare your ingredients before you begin.

Season chicken with salt & pepper. Cook in olive oil until done through. Remove to plate.

Cook carrots and shallots in a stock pot with olive oil until tender, about 5 minutes.

Mix in garlic, cumin, paprika, crushed red pepper, and cook 1 minute.

Stir in chicken stock, veggie stock, chickpeas, & tomatoes. Mix in cilantro, lemon, and chicken.
