Msakhan- Sumac Chicken Flatbread
Clean & cut 2 whole chickens & add to pot filled with boiling water

Bring to w boil & remove gunk that forms.

Add 6 bay leaves, around 10 whole cloves, 1 tsp salt, cardamom & turmeric

Add a 1/4 of an onion & cover. Cook on medium for 1 hour

Meanwhile sauté 6 cups chopped onion & 1.5 cups olive oil

Add 1.5 tsp salt & 3 tbsp sumac

Remove chicken from heat. Set 1 cup of chicken broth aside

Mix in 1 tsp black pepper & 1 cup chicken broth

Mix 1/4 cup olive oil, 1 tbsp plain yogurt & 2 tbsp sumac

Brush chicken with sumac mixture

Flip & brush other side

Broil for 5 minutes

Spoon onion mixture onto taboon flatbread

Broil for 5 minutes

Top with chicken & toasted almonds
