Mushroom & Chestnut Parcel With Dauphinois
Prepare chestnut velouté > than blend, sieve and reduce

Finely chop the ingredients for the mushroom pâté

Pan fry the mushroom mixture until dry > mix in the breadcrumb, chestnut & walnut mix

Pan fry the chanterelles with garlic and parsley

Blend all the ingredients for the dauphinois sauce

Layer the dauphinois potatoes in an oven dish > bake 50 min. 180C / 350F - covered with foil

Meanwhile assemble the parcels with the mushroom pâté and chanterelles > bake 15 min. 180C / 350F

Last minute steam broccoli for about 6 minutes

Take the dauphinois & parcels out of the oven. Reheat & reduce the chestnut velouté

Plate; place parcel & dauphinois on top of the chestnut velouté & add broccoli & chanterelles
