Heat butter over medium heat in saucepan until it foams. Stir in the mushrooms and season with salt.

Simmer until liquid evaporates, which will take about 20 minutes.

Stir in the flour, stirring and cooking for about 5 mins.

Keep stirring!

Add one cup of beef stock and continue to stir.

Stir briskly until first cup of stock is incorporated, then stir in the remaining stock and mix together.

Season with freshly cracked pepper and reduce heat to medium-low.

Simmer until thickened, about 30 minutes. Stir often.

Keep simmering until it’s nice and thick.
