My Favorite Quinoa Recipe

Red Onion
1 cup
Quinoa
1 clove
Garlic
1 6oz package
Feta Cheese
1
Orange Pepper
1/4 cup
Parsley
2 Cups
Chicken Broth
A Splash of
Olive Oil
A Splash of
Balsamic Vinegar
1/2
Lemon
Optional
Cooked Chicken
*Ingredients Note: if you like more dressing you can double or triple what we use. We tend to like it with less dressing.
First add 2 cups of chicken broth to a medium saucepan

Next smash 1 clove of garlic and add it to the chicken broth. Bring the mixture to a boil.

When the chicken broth and garlic is boiling add in one cup of quinoa.

Turn the heat to medium low and cover for 15-20 minutes or until water is completed absorbed. Stirring occasionally.

While the quinoa is cooking, cut up your pepper and onion and add them to a medium bowl.

Next sprinkle 1/4 cup of parsley into your bowl.

When quinoa is done discard all of the garlic cloves.

Add quinoa to your bowl and mix.

Add in package of feta cheese

For the dressing, mix 1/2 a lemon, a splash of balsamic vinegar, and a splash of olive oil.

Pour over mixture and stir to combine

Serve and enjoy!
