Netherlands : Poffertjes
Combine wheat and buckwheat flours, butter, yeast, egg, milk, then sugar and salt.

Cover and let stand in warm place for an hour.

Grease cast iron pan with butter.

Pour the batter to 3/4 of each hole using a bottle dispenser, and cook for 2-3 minutes on medium.

Flip each poffertje using a skewer and a fork, and cook for 2 more minutes.

Dust icing sugar and serve warm with favorite toppings.
