No Bake Lemon Raspberry Bars
Tart lemon squares made with sweetened condensed milk and graham crackers are topped with a sweet raspberry lemon buttercream.
Mix graham cracker crumbs, lemon zest and freeze dried raspberries in a bowl.
Melt butter into sweetened condensed milk. Then add lemon juice.
Add sweetened condensed milk mixture to graham cracker mixture and mix to combine.
Press mixture into a parchment lined baking pan and chill while you make the buttercream.
Beat butter and lemon zest for 5 minutes, until light and fluffy. Then add confectioners’ sugar, freeze dried raspberries and wet ingredients.
Beat buttercream until smooth. Then spread over chilled lemon raspberry bar base. Chill until buttercream is set.
