No Bake Mini Cheese Cakes
27 gram/digestive biscuits,1/3 cup brown sugar,1/2 cup melted butter,1cup walnuts or pecans,pinch of salt n cinnamon blend to form cake base.
900g cream cheese room temp,1/2 cup castor sugar blend to form a creamy mixture.
Now add 1 tbsp lemon juice,1/3 cup condensed milk and 1/3 cup sour cream room temp and blend again.
In another bowl take 1/2 cup fresh cream,1 tsp vanilla essence,3 tbsp castor sugar whisk till it becomes stiff and fluffy.
Now mix the fluffy cream mix into the cheese mixture fold in to make a smooth mixture( cake filling)
Now add the biscuit base into cupcake wrappers press down set at the base then leave in the fridge to set For an hour.
Fill the cheese filling in an icing bag and fill the cupcake wrappers all the way to the top. Tap the tray and refrigerate for min 12 hours.
You can garnish the cake with dollops of whipped cream, berries,jam or enjoy plain.
