Line your cupcake tray.

Butter, brown sugar, desiccated coconut and digestives.

Melt the butter and add all ingredients to the food processor.

Process until it resembles coarse sand.

Divide evenly between cupcake holes.

Press down. Refrigerate while you prep the topping.

Thickened cream, cream cheese, sugar, lemon, vanilla and gelatin.

Combine the gelatin and water whisk.

Whisk the cream to stiff peaks.

Add all the other ingredients. Whisk until smooth.

Spoon evenly between the cupcake liners.

Set in the fridge for three hours or until the liner pulls away easily.
