No Bake Mocha Cheesecake
Trim lady fingers to the height of your springform pan. Quickly dunk them in milk and arrange around the pan. Use the trimmed bits as the bottom crust

Don't worry if the bottom isn't absolutely perfect. Just fill as many holes as possible.

Melt chocolate chips until they can be stirred smooth

Stir instant coffee into hot water.

Stir coffee mixture into chocolate and set aside.

Beat cream cheese and sugar until smooth

Add vanilla and chocolate mixture with mixer running.

Slowly drizzle in cold cream while beating on high.

Beat until fluffy and able to hold stiff peaks.

Spoon into crust. Chill until firm, at least a couple of hours.
