In a Mixie Jar Add 1 cup Roasted Peanuts

1/2 Teaspoon Poppy Seeds ( Optional)

Add Turmeric Powder

Grind into a Powder

Transfer to a bowl

Cut the eggplant

Stuff the Eggplants with the Spice Powder

They are Ready to be sautéed

In a pan, Heat Oil

Splutter Cumin Seeds

Add Chopped Onions

Add Some Turmeric

Add Chopped Tomatoes & sauté

Cook until the onions & tomatoes are soft

This will take 4-5 minutes

Add the remaining Spice Powder

Add about 1 cup of water & bring it to a boil

Meanwhile, heat oil in a pan, asd the stuffed eggplants

Cook on medium flame, Turning them in between

It will take 8-10 minutes to cook

Gently drop them into the gravy

Add another 1/2 a cup of water & let it simmer on low flame for 3-4 minutes

Cover with a lid & set aside

Serve Enngai with Jolada Rotti or Chapatis
