Nostalgic Club Sandwiches
Chicken pieces marinated overnight or 3-4 hours

Stir fry in a little oil & chop/shred.

Mix in mayonnaise, salt, pepper & dijon mustard

Take 3 bread slices and cut off sides

Spread the chicken mixture in first layer

Add a lettuce leaf

Spread mayo on second slice & place on top

Spread some more mayo on other side of 2nd slice, place boiled egg and tomato slices

Place cheese slice, mayo on slice no.3 and place on top

Warm a skillet/grill or sandwich press, brush little oil

Toast on medium heat till golden & crisp on both sides
