In a blender, add 4 egg whites

Blend until smooth. Rest batter for 1 hour or chill overnight.

Heat a skillet on medium heat and spray with olive oil cooking spray

Add 1/4 cup batter to the skillet and cook until bubbles form

Flip and cook the other side. These are thin, crepe-like, pancakes

Serve with berries, butter, and a drizzle of maple syrup
