Oil-Free Authentic Falafel
Soak 1lb. chickpeas and 1/2t baking soda over night.

Add chickpeas, 1c parsley, 1c cilantro, 2T dill, 1 small chopped red onion, 8 cloves garlic...

...2T salt, 1T pepper, 1T cumin, 1T coriander, and 1/2t cayenne to a food processor.

Blend until mostly smooth. Don't over mix. Refrigerate for an hour or so.

Stir in 2T sesame seeds, 1t baking powder, and 1/2c oat flour.

Use a tablespoon measure to scoop 2-tablespoon sized balls. Roll into spheres or flatten into patties. Bake at 400 for 15-20 minutes.

Serve with pita and tahini. Enjoy!
