Oil-Free Skillet-Fried Brussels Sprouts
Trim and chop Brussels sprouts in half. Measure out 1lb.
Toast 3T sesame seeds in a large, non-stick pan on medium-low, until you can see browning. Remove from the pan and set aside.
Mix the trimmed brussels sprouts with 1T vegetable stock, 1T maple syrup, and 1t kosher salt.
Place the brussels sprouts cut-side down on the pan. Cook on medium-high until deeply browned, adding leftover broth mixture as necessary.
Don’t move the sprouts until they are browned.
Flip the sprouts and allow to cook until tender.
Place the sprouts in a bowl. Stir in 1T rice vinegar, 2t sriracha, and 2t maple syrup.
To serve, sprinkle with the sesame seeds and chopped scallions. Enjoy!
