Oil-Free Vegan Tofu Scramble
Chop 8oz. mushrooms, a red onion, 2 bell peppers, and mince 2 cloves garlic.

Mash 2 blocks of tofu (anywhere from medium firm to extra firm is fine).

Heat a few tablespoons of vegetable broth in a pan. Add the veggies and saute until soft.

Allow any liquid to cook off then remove the veggies from the pan and set aside.

Add the tofu along with 1T garlic powder, 2t onion powder, 1t each of cumin, paprika & turmeric, 1/4t cayenne, and salt & pepper to taste.

Cook until the tofu is warmed through.

Mix the tofu and vegetables together.
