Old-Fashioned Preacher Cake
Combine 1 cup vegetable oil and 2 cups sugar in the bowl of a stand mixer.

Mix on low speed to combine.

Add 3 eggs and mix well.

Add a 20-oz can of undrained crushed pineapple...

Plus 3/4 cup chopped pecans (or walnuts).
In a separate bowl, whisk together the dry ingredients: 3 cups flour, 2 tsp baking soda, 1 tsp salt, and 3/4 tsp cinnamon.

With mixer on low speed, gradually add dry ingredients.

Add some shredded coconut if you’d like!
Pour batter into prepared pan. Bake at 350F for 40-50 minutes.

Meanwhile, prepare frosting by beating together a stick of butter and a block of cream cheese.

Add 1/2 tsp vanilla extract and mix.

Gradually add 2 cups of sifted powdered sugar.

Beat until it’s fully incorporated and smooth.
Add 2 Tbsp of heavy cream and increase mixer speed, beating until it’s nice and fluffy.

Pull the cake out of the oven when the baking time is complete. Let it cool completely before frosting.
Spread that frosting on top!

Sprinkle chopped pecans over the frosting.
