ONE BOWL GLUTEN FREE DOUBLE CHOCOLATE BANANA MUFFINS
Add bananas to a large mixing bowl and mash with a fork

Add the eggs (make sure they are room temperature)

Add the maple syrup, coconut oil and vanilla extract and mix well to combine

Add almond meal, cacao powder and baking flour

Mix well and break up any clumps in the almond meal

Add your choc chips

Fold the choc chips into the muffin mixture

Divide evenly into muffin holes or muffin cases

Bake for 18-20 mins in pre-heated oven on 180 C | 355 F

Cool for 5 mins then transfer to a wire rack to cool further
