One Pan Chicken And Shallots
Pat chicken dry, sprinkle with flour, salt and pepper

Heat butter & olive oil in pan and brown chicken on both sides

It will not be cooked through but will get a nice sear on both sides

Remove from pan and set aside on a plate

Add the shallots and cook until caramelized and softened

Deglaze pan with the white wine and stir in the Dijon

Add back the chicken to pan

Cover, reduce heat to low & allow to simmer 20-30 min

Uncover & allow it to continue to simmer 10-15 minutes longer until sauce is reduced & thickened

Add the tomatoes and cook for another couple of minutes then it’s ready to serve

I love to serve mine with spinach rice but any side will do
