One Pan Teriyaki Ahi Tuna & Cauliflower Rice
Preheat your oven to 375 degrees. Add a sheet of parchment paper on your baking sheet. ( easy clean up!)
What you'll need
Cauliflower Rice
Ahi Tuna
Teriyaki Sauce
Everything Bagel Seasoning
Avocado Oil
Take your bag of cauliflower rice, I’m using the Trader Joe’s frozen cauliflower stir fry and spread on your pan.
Add some teriyaki sauce or coconut aminos to a plate. Lightly coat your tuna in the teriyaki sauce.
Sprinkle TJ’s everything but the bagel seasoning on both sides of your tuna. Place tuna on cauliflower rice mix.
Add in any other rogue veggies you may have hanging in the back of your fridge! I added some shaved Brussels sprouts!
Drizzle some additional teriyaki sauce and avocado oil! You can use coconut aminos, soy sauce or butter if you’d like.
Bake for 10 minutes on 375 degrees, if you like your tuna medium then move your tuna to another plate. If you like it well done, keep it on the pan.
Raise oven temp to 400 degrees. Add rice & veggies back into oven. Roast for an additional 7- 10 min.
Add salt, pepper, onion & garlic powder to taste! Makes great meal prep for the week or an easy weeknight dinner!
