Brown cubed chicken in a skillet over medium-high heat

Remove chicken from pan and brown garlic. Stir in coconut milk, chicken broth & soy sauce

Stir in peanut butter, ginger & chili paste

Add in carrots, red peppers, broccoli & pearl couscous
4
Stir in chicken, bring to a simmer, cover and cook for 15 minutes

Remove cover and garnish with chopped peanuts, scallions and cilantro
