ONE POT BAKED GREEK CHICKEN ORZO (Giouvetsi/Youvetsi)
Season chicken with salt, pepper paprika, and oregano

Heat olive oil in pan over medium high heat

Add chicken and brown well on both sides,

approx 5-7 min each side

Then remove and set aside

Add the onions, carrots, celery, garlic and cook until the onion is softened and veggies are tender, 7-10 min

Stir in the tomato paste and the orzo and cook for just a minute until toasted

Deglaze pan with wine and cook 1 minute

Stir in the stock and tomato Passata

Season with extra spice and bay leaf

Place back chicken and nestle it gently into pan along with the juices then bake 25-30 min

Or until orzo is tender and chicken is cooked through

It will seem a bit watery but it will thicken up quite quickly. Stir in more warmed broth if needed when reheating

And enjoy with freshly chopped herbs and grated or crumbled cheese
