One Pot Vegan Lentil Dhal
Add 2 chopped onions

Add in 4 cloves garlic & 1 inch piece ginger

Cumin seeds, yellow mustard seeds, turmeric & garam masala

Add a green chilli (optional) stir well

Pop 2 diced carrots and 2 tomatoes in and stir

Stir in 1 cup red lentils

Pour in 400ml coconut milk

Simmer for 15 minutes

Season to taste and stir through fresh coriander
