One Skillet Orange Shrimp w/Sautéed Vegetables
What you’ll need: sesame oil, precooked shrimp, bell peppers, carrots, orange, fresh ginger, soy sauce, honey, garlic, and cornstarch.
In a bowl, combine fresh squeezed orange juice, orange zest, garlic, ginger, honey, soy sauce and cornstarch. Whisk until no clumps remain, set aside.
Remove the tails from the shrimp.
Chop the carrots carrots matchstick style, and cut the peppers fajita style.
Heat sesame oil on medium-high heat.
Sauté the veggies for 10-15 minutes. The longer you cook them, the softer they’ll be. Remove from pan and set aside.
Heat more sesame oil in the same pan, and sauté precooked shrimp for 4-5 minutes.
Add the sauce and heat until thickened, stirring occasionally.
Add the veggies back to the pan, and stir to coat in the orange sauce.
Done! Top with sesame seeds and green onions, and serve over rice or yakisoba noodles!
