Orange Olive Oil Cake (with Mascarpone Whip)
For the Cake: whisk together the dry ingredients- flour,salt, baking powder & soda, almond flour

And sugar and whisk until well combined

In a large mixing bowl add the wet ingredients: eggs, oil, milk, orange juice, orange liqueur

Orange zest, vanilla and orange bitters if using then whisk well to combine

Whisk in the dry ingredients a little at a time

Until fully incorporated- scraping down the sides of bowl

Pour batter into prepared spring form pan

Then bake 1 hr-1 hr 15 min - or until cake tester comes out clean

And cake is deeply golden - and don’t worry about any cracks

For the Mascarpone whip: in a medium bowl beat the whipping cream with the vanilla and sugar

Beat until thick peaks. Then beat the room temperature mascarpone (in separate bowl) a few seconds until smooth

Add the whip to the mascarpone

and beat to combine - DO NOT OVERMIX

Cake can be served as is with a dusting of powdered sugar or with a thick layer of the creamy whip

I like to garnish with some fresh orange slices
