Mix Napa cabbage, red cabbage, Bok Choy leaves, carrot, cilantro, red bell pepper, water chestnuts, bamboo shoots, and salt together in a large bowl

In a separate bowl, whisk together creamy almond butter, lime juice, avocado oil, soy sauce, sesame oil, sriracha, honey, rice vinegar, and ginger

Once the dressing is smooth and creamy, season to taste with salt

Pour the dressing over the coleslaw and stir until well mixed and coated. Cover and refrigerate for at least 1 hour

Season to taste with salt and garnish with sesame seeds if desired and DEVOUR!
