Oven Fried and Baked Eggplant Parmesan
the ingredients

cut eggplant into 1/2 inch slices

prepare the breading for the eggplant slices~season flour, add cheese to breadcrumbs and beat eggs

to bread eggplant slices, dip in seasoned flour then beaten egg and then the breadcrumb cheese mixture

add oil and breaded eggplant to preheated baking sheets and bake for 20 minutes

flip over the eggplant and bake for another 15 minutes

the eggplant will be crispy and golden brown

to assemble the eggplant Parmesan, layer marinara sauce and eggplant

sprinkle with mozzarella and Parmesan cheeses and more marinara
9
continue layering the eggplant, cheeses and marinara ~ there will be 4 total layers

on the top layer, finish with more Parmesan cheese

bake for 20 minutes
