Oxtail Stew (Rabo Guisado)
Garlic, adobo, oregano, red wine, soy sauce and white vinegar

Stir well, cover and marinade

Add oil, oxtail, stir well and cover over medium high heat.

Check periodically to make sure it’s not sticking and it’s becoming tender. Add water if needed.

Check with fork.

Add peppers, onions, olives and stir.

Simmer and add tomato sauce.
