Pad Thai Curry Noodles
Take olive oil in a pan and saute ginger, garlic and Thai red curry paste.

Add onions and saute till raw smell disappears.

Add your favorite veggies and saute till soft. Add salt and brown sugar.

Add paprika and cayenne powder.

Add few drops of fish oil and a can of Thai coconut milk.

Further, add vegetable stock.

Drop rice noodles in the broth. Add basil, red chilli flakes, thai seasoning and close the lid.

Garnish with spring onion greens and peanut powder. Serve hot.
