PAHAARI (PAYE & NIHARI)
Pahaari is a name coined by my mom-a fusion of paye and nihari - an annual Eid Riwayat at ours

Let’s start with the recipe. I’m making this in instant pots. It can be done on the stove as well

Wash 12 goat trotters (paye). Bring to a boil with around 1 tsp turmeric.Throw water. Rinse trotters

Paye: 1/2 cup oil.Add paye;1 pack Shaan Paya masala; 2 tbsp GG paste.Bhoono.Add water.PC (low) 2 hrs

Nihari:1/2 cup oil.3 chilies.Add meat & bones.1&3/4 pack nihari masala;GG.AddWater. PC(High) 50 min

Once Paye & Nihari are done, transfer it all into a large pateela. (Discard bones from nihari IP)

Prepare Atta mixture (method from back of Shaan Nihari box). Pour & stir till thickish consistency

Tarka: fry 1 onion.Add remaining nihari masala;1/2 tsp red chili;1/2 tsp garam masala. Pour

Your Pahaari- Eid Dinner is ready
