Paleo Baked Apples With Joolie’s Dates

1/2 cup
Pecans
1/4 cup + 2.5 tsp

Grated Fresh Ginger
1 tsp
Lemon Zest
2 tsp
Almond Flour
1 tbsp
Coconut Cream

Apple Juice
Preheat the oven to 375F. Chop the pecans and bake for 4 minutes, until lightly toasted. Set aside when done.

If needed, remove the pit from 6 dates - I used Joolie’s pitted dates here. Then slice them and chop them into small pieces. Set aside.

In a bowl place 2 tsp melted ghee with the egg yolks, grated ginger, lemon zest, almond flour, & coconut cream. Whisk until well combined.

Add in the chopped dates and pecans and stir until evenly coated, making sure to break up any date pieces sticking together. Set aside.

Prep the apples by slicing off the top and coring out the middle with a spoon or melon baller. Set bottom side down in an 8x8 inch dish.

Scoop the date mixture into each apple, filling up to the top. It’s okay if the mixture isn’t even with the top of the apple.

Add in the apple juice and 1/4 cup melted ghee to the bottom of the pan. Pour an additional 1/2 tsp of melted ghee on top of the apples.

Cover with foil and bake 45-50 mins, turning the dish 180 degrees halfway through for more even cooking.

Remove from oven and serve with some whipped coconut cream. Enjoy!
