Paleo Easy Healthy Sweet Potato Casserole
Place peeled, cored & chopped apples & sweet potatoes & salt into a pot and cover w/water

Bring to a boil and cook until very soft & tender (30-35 min) Drain well & place into a large bowl

Add apple sauce, ghee, vanilla, cinnamon, nutmeg, salt, pepper & mash until well combined

Stir in coconut flour

Use a small food processor and pulse the pecans and dates until broken down and crumbly

Pour pecan mixture into a small bowl and combine with the remaining ghee

Spread sweet potatoes mixture into a greased casserole dish. Sprinkle pecan mixture evenly over top
