Stir together almond flour, coconut flour, ginger, cinnamon, baking soda, and salt

In a separate bowl, beat together coconut sugar, egg white, and coconut oil using an electric mixer

Add molasses to coconut sugar mixture

Stir the flour mixture into the wet mixture. Chill the dough in the refrigerator for 10 minutes

Once chilled, roll 1 Tbsp sized dough balls and roll around in coconut sugar

Place onto baking sheet & slightly press down. Bake til edges are darker brown & crackly (19-20 min)
